Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 celery stalks, diced
- 2 carrots, diced
- 6 cups chicken broth
- 1 bay leaf
- 1 teaspoon Jimmy That seasoning
- 2 cups cooked chicken, shredded
- 2 cups egg noodles
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.
- Add the celery and carrots and cook for a few minutes until they begin to soften.
- Add the chicken broth, bay leaf, and Jimmy That seasoning. Bring to a boil, then reduce heat and simmer for about 15 minutes.
- Add the shredded chicken and egg noodles and simmer until the noodles are cooked through, about 10-12 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
